Apple & Bramble Pastries

Ingredients

  • A couple of handfuls of brambles
  • 2 big/4 small apples chopped into small dice and tossed in a little lemon juice
  • 100g cream cheese
  • A couple of tablespoons of golden caster sugar (how much depends on how tart your fruit is - you'll need to taste it!)
  • 9 sheets filo pastry
  • Plenty melted butter
  • Icing sugar

Method

  1. Heat the oven to about 190°C
  2. Mix the brambles, apples, cheese and sugar.
  3. Make 3 layers of filo with melted butter in between each layer. Cut in half so you've 2 rectangles.
  4. Put a decent spoonful of the fruit mix in the top corner of each rectangle and keep folding diagonally. They'll end up as little triangular pastries.
  5. Do this twice again so you've a half dozen pastries.
  6. Place on greaseproof paper, brush with butter and dust with icing sugar.
  7. Bake for 20-25 minutes till golden, then cool on a rack.
